This easy vegan stuffed peppers recipe is the perfect meal for a tasty dinner and is packed full of protein and yummy goodness!

Prepping takes about 30 minutes and then pop them in the oven at 180 degrees for 40 minutes. Vegan stuffed peppers is one of my staple dinner recipes. The sultanas in the vegan stuffed peppers add a nice touch of sweetness and compliment the crunchy veg. This dish is low in calories and high in energy!

Make these easy vegan stuffed peppers to enjoy in, on a cold winter’s night or maybe serve for a dinner party. You can also experiment with different veggies in your stuffing such as courgettes, peas, sweetcorn or okra!

Serve with a simple green salad and enjoy!

TIP: Use Nutritional Yeast as a topper for some added B12 and a yummy, cheesy taste!

🌾 1x cup of quinoa
♨️ 300ml vegetable stock
🧅 1/2 an onion
🧅 1/2 red onion
🧄 2x garlic clove
🥕 1-2 carrots (diced) (depending on size)
🍄 10-15x small mushrooms
🌱 1x handful spinach
🥄 1x tsp chili powder
🥫 1x tin of chopped tomatoes ⠀⠀⠀
🥄 1x tsp Tumeric
🥄 1/2x tsp paprika
🍇 1x handful sultanas
🌶 4x bell peppers (your choice of colour)
