Try this super yummy Vegan Nicoise salad. This is a quick and easy vegan recipe to make that perfect light summer lunch. This is made with a three-way mustard dressing to tie in the flavours and give it a delicious zang! Minimal cooking, mainly prepping that takes 30 minutes.

– 10-12x baby new potatoes
– 1x handful of green beans
– pinch of salt
– 3x bunches of mint



– 1x garlic clove
– 1x tsp maldon salt
– 1/4x tsp whole grain mustard
– 1/4x tsp english mustard
– 1/2x tsp dijon mustard
– 6x tbs extra virgin olive oil (links below!)
– 1x SMALL lemon squeezed
– 6x turns of black pepper
– 1 1/2x tbs white wine vinegar
– 1x bunch of finely chopped chives



– 3-4x banana shallots (diced)
– 3-4x romine lettuce leaves
– 10-12x baby plum tomatoes (halved)
– 1/2x cucumber (de-seeded & diced)
– 5x large green olives (halved)
– 10x large capers (optional)



Boil the baby new potatoes in a pan for 14 minutes. Add a pinch of salt and 3x bunches of mint. Stir it in.

Prepare and half your green beans. Place in a boiling pan of water for exactly 2 minutes. Then get a bowl of cold water and add some ice cubes to it. Drain the beans and add them to your ice water, set aside for later.



Crush a clove of garlic with the salt in a pestle and mortar until it becomes a paste. Then add the mustards, the extra virgin olive oil, the squeezed lemon, black pepper, and white wine vinegar. Give it a good stir. Then add your chives. Use scissors to chop them in evenly. Give another thorough stir. Place aside to marinate.



Start making your Vegan Nicoise Salad by preparing all your salad ingredients. Drain your potatoes and beans. Then grab a large salad bowl. Start layering your salad bowl with the ingredients starting as your base layer.

You can add the dressing as it is but if you want a thoroughly mix the flavours, place them into an old clean jar and give it a really good shake. You will see that the consistency will change slightly and appear more creamy.

Then evenly dress this on your salad with each layer. Continue your layers until you finish with each ingredient. Then serve and enjoy!
